Hawaiian Kanpachi (Amberjack) - Sashimi Cut Fillet
Kanpachi is a younger amberjack, cousin to hamachi but with a touch less fat and a cleaner, brighter profile. Clean, firm, and gently sweet, it has a beautifully silky raw texture that makes it a sushi-counter favorite and one of the most satisfying yellowtails you can serve at home.
Ocean-raised in the clear waters off Hawaii, it is at its best sliced for sashimi or crudo, though a quick sear brings out a lovely richness. Refined yet approachable, it is an easy way to bring the sushi bar to your own table.

A note on weight: Kanpachi whole fillets are skin off and V-cut, bone-free and chef-ready. Every cut is portioned by hand, so the exact weight varies slightly from the size you choose. You may receive a little over or a little under, and your order is billed at the listed price for that size. That is the nature of a fresh, hand-cut product.
Shipping & Delivery
We cut to order and ship Tuesday, Wednesday, and Thursday. Order by 6PM ET on a ship day and your box goes out that same day. Orders placed after the cutoff, or on other days, ship on the next shipping day.
Mainland orders arrive 2 days after they ship, packed cold with gel ice, so Thursday shipments arrive Saturday. Island orders arrive the next day. You will get tracking by email the moment your box is on its way.
