The fish

What does sashimi grade mean?

It is the quality we sell to restaurants for serving raw: clean, firm, and kept cold from the auction to your door. Our Know Your Fish guide explains how we grade.

Where does your fish come from?

Ahi and many of our species are wild-caught in Hawaiian waters and bought at the Honolulu auction. Others, such as salmon, steelhead, hamachi, kanpachi, and barramundi, are responsibly ocean-raised or farm-raised in clean waters. We label the species and source on every product so you always know exactly what you are getting.

Why might my fish weigh slightly more or less than the size I ordered?

Every slab is cut by hand from whole fish, so the exact weight varies slightly from the 2 or 3 lb size you choose. You may receive a little over or a little under, and your order is billed at the listed price for that size. It is simply the nature of a fresh, hand-cut product.

Ordering and gifts

Is there a minimum order?

No large minimum. You can order a single cut or stock the freezer. Because shipping cold seafood carries a fixed cost, larger orders give you better value per pound, and orders over $150 ship free.

Can I order for a specific date or event?

Yes. We deliver on Thursdays, so order by Monday night for that week. If you are planning around a specific date, reach out and we will help you time it.

Can I send Ahi Club as a gift?

Yes. Our Kits & Gifts are built for it, and you can ship to any address in our delivery area. Reach out if you are timing a gift for a specific day.

Shipping and delivery

When will my order arrive?

We cut and ship once a week. Order by Monday night (HST), we cut and pack it Tuesday, and it arrives Thursday. Orders placed after Monday go out the following Tuesday. See our Shipping & Handling page for the full rhythm.

Where do you ship?

The contiguous United States and the Hawaiian Islands. We are not able to ship to Alaska or Puerto Rico.

How is my order packed?

Cut to order, sealed, and packed with gel ice in an insulated box built to hold temperature, then flown to you cold. A little condensation in the box is normal and a sign the cold chain held.

How fresh is it when it arrives?

Because we cut and ship once a week, your fish leaves at its freshest. For Hawaii fish, what you receive is close to what came off the auction floor that week.

What if I am not home when it is delivered?

Because we deliver on Thursdays, plan for someone to receive the box that day and bring it in promptly. Fish left outside in the heat is the one thing the cold pack cannot fully protect against.

How do I store it?

Keep your fish cold and use it within a day or two of arrival for the best result. Full steps are on our Shipping & Handling page.

How do I serve it raw safely?

What is your freshness guarantee?

If your order arrives short of the quality we promise, contact us within 24 hours with your order number and a photo, and we will replace or refund it. See our Freshness Guarantee.
