This is Hawaiian swordfish at sashimi grade, known locally as shutome, landed on short trips that keep it exceptionally fresh. The meat is faintly pink, meaty, and dense, closer to a fine steak than a fillet, with a mild sweetness and a buttery moisture that sets island swordfish apart.
