Pairs well with
Ultra is the rarest and finest grade of Hawaiian ahi we offer, and never a given, on many days not a single fish meets the mark. When one does, we set it aside the moment we find it. The color is a deep, luminous red, the flesh dense and cool to the touch, with a low water content and a high, creamy oil that melts the moment it meets the tongue and carries a clean, almost sweet richness across the palate.
This is ahi at its purest, meant to be tasted with as little between you and the fish as possible, a few slices, good salt, maybe a whisper of shoyu. When you see it in stock, it is worth seizing, this is as good as Hawaiian ahi gets.
Best for: sashimi, nigiri, and the purest raw preparations. Wild-caught Hawaiian ahi, our top grade.
A note on weight: Every cut is portioned by hand, so the exact weight varies slightly from the size you choose. You may receive a little over or a little under, and your order is billed at the listed price for that size. That is the nature of a fresh, hand-cut product.
Shipping & Delivery
We cut to order and ship Tuesday, Wednesday, and Thursday. Order by 6PM ET on a ship day and your box goes out that same day. Orders placed after the cutoff, or on other days, ship on the next shipping day.
Mainland orders arrive 2 days after they ship, packed cold with gel ice, so Thursday shipments arrive Saturday. Island orders arrive the next day. You will get tracking by email the moment your box is on its way.
