Hamachi (Yellowtail) - Sashimi Cut
This is fresh, never frozen Japanese hamachi at the top of its class, the yellowtail that built the reputation of the sushi bar. The flesh is pale and glossy with a natural creaminess and a high, clean oil, rich enough that it feels almost a shame to cook.
Served raw, it is soft and buttery with a mild, faintly sweet finish that wins people over on the very first slice. It is one of the most crowd-pleasing fish we carry, forgiving for the first-timer and deeply satisfying for the sushi lover, whether you lay it over rice, plate it as crudo, or grill the collar until the edges caramelize.
Best for: sashimi, nigiri, and crudo, or grill the collar. Farm-raised in Japan.
A note on weight: Every cut is portioned by hand, so the exact weight varies slightly from the size you choose. You may receive a little over or a little under, and your order is billed at the listed price for that size. That is the nature of a fresh, hand-cut product.
We cut to order and ship Tuesday, Wednesday, and Thursday. Order by 6PM ET on a ship day and your box goes out that same day. Orders placed after the cutoff, or on other days, ship on the next shipping day.
Mainland orders arrive 2 days after they ship, packed cold with gel ice, so Thursday shipments arrive Saturday. Island orders arrive the next day. You will get tracking by email the moment your box is on its way.
