The difference
Fresh, not frozen.
Order seafood online almost anywhere else and it shows up frozen, flash-frozen, or super-frozen, then thaws out in your kitchen. Not here. Our fish is cut the morning it ships and flown to you cold, fresh the entire way, never frozen at any point.
That is why it slices clean, holds its color, and eats the way it does at a good sushi counter. Shellfish is the one exception. Crab, shrimp, scallops, and octopus are flash-frozen at their peak, which is how they are meant to travel, and it is noted right on the product page.

Easier than you think
You do not need to be a chef.
Your fish arrives ready to eat. No prep, no cooking, no special equipment. Take it out of the box, slice it against the grain with a sharp knife, and put it on a plate. That is the whole method.
If you would rather cook it, everything we sell takes a sear beautifully. But we cut to order so you can eat it raw the day it lands, the way it is meant to be.

Cut the day it shipsWe portion your fish by hand in Honolulu the morning it leaves us. Nothing is cut and held.

Packed coldSealed with gel ice in an insulated box built to hold temperature across the ocean. A little condensation is normal and a sign the cold chain held.

At your door in two daysWe ship Tuesday through Thursday and email tracking the moment your box is on its way. Plan to bring it in on delivery day.

Before you order
Questions we hear most.
Is it safe to eat raw at home?
Yes. This is the same fish we sell to restaurants for raw service, handled the same way: kept cold from the auction floor to your door and cut the day it ships. Keep it refrigerated the moment it arrives, use a clean board and a sharp knife, and serve it the day you open it. If anything about the condition looks off to you, do not eat it, send us a photo and we will replace or refund it.
Is two pounds too much for me?
Probably not, and if it is, it keeps. Two pounds serves four to six as sashimi, so it is a dinner party portion rather than a solo one. If you are cooking for one or two, eat what you want the day it lands and wrap the rest tightly for the freezer.
Frozen well on arrival, it holds beautifully for a later meal. Sear it, grill it, or make poke. The only thing we would not do is freeze it and then expect raw sashimi later, that is a first-day pleasure.
How much should I order?
As a rough guide, about a third of a pound per person for sashimi as a main course, less if it is one course among several. Two pounds comfortably serves four to six. Fish is cut by hand, so exact weight varies slightly from the size you choose.
Is your fish fresh or frozen?

How is this different from fish at the grocery store?
Most retail fish has been through several hands and several days before it reaches the case, and much of what is sold as fresh was previously frozen. Ours is selected at the auction, cut to order the morning it ships, and flown to you cold. You are buying a grade and a handling standard that supermarkets are not set up to sell.
What if I am not home when it arrives?
Watch your tracking email and plan for someone to bring the box inside on delivery day. The box is packed to hold temperature well past the expected window, but fish left outside in the heat is the one thing cold packing cannot fully protect against.
Where do you ship, and what does it cost?
Orders over $200 ship free. Below that, shipping is a flat $65 to the mainland and $20 within Hawaii. We ship to the contiguous United States, Anchorage, and the Hawaiian Islands.
