Opah, or moonfish, is one of the ocean's most spectacular fish, a deep-water giant with bright coral-red flesh and several distinct textures in a single body. It is naturally sweet and firm, with a fat content that rivals salmon and a flavor that sits somewhere between tuna and swordfish.
Graded here for raw service, it is a showstopper as sashimi or crudo, holds up beautifully in poke, and takes a quick sear like a fine steak. For the adventurous cook who wants something genuinely different yet approachable, opah is a memorable choice.
